TO MAKE WINES THAT COMBINE
TRADITION AND MODERNITY
As harvest-time nears, maturity checks punctuate the days of September.
The priority is always the aromatic maturity for white grapes, and the only reliable tool for this is the daily tasting of the grapes.
As for the red grapes, tastings are as frequent as for white grapes, but in this case, we are looking for the phenolic ripeness in which we assess the quality of the pips and skin of the grape.
During the harvest, the selection of the grapes is essential and has to be very rigorous. The goal is to eliminate all abnormalities that can affect the wine, such as leaves and green petioles and to keep only the best ripe berries.
The white wines are made on sediments in thermo-regulated stainless steel vats. Afterwards, for the Bordeaux White, the wine is placed in stainless steel vats, whilst for the Blaye Côtes de Bordeaux White Cuvée Prestige, the wine is placed in new Oak barrels wher its ferments 6 – 8 months.

The red wines are made in thermo-regulated stainless steel vats as well. Then the wines are aged, depending on the Cuvée, between 12 to 18 months in oak barrels in our cellars until the development of each Cuvée.
Once a year, under Laurent’s control we ourselves bottle the whole production of the previous year. This philosophy is the consumer’s guarantee to get the same quality from the first to the last bottle of each Vintage. The bottles are then stored in a special temperature-controlled 400 m² building.
